Our of the month is attorney turned entrepreneur (and ice cream enthusiast), Victoria Lai. Victoria's career path was excelling within the legal industry where she progressed into working at the Department of Homeland Security in the U.S. Citizenship & Immigration Services as a Counselor to the Director. Although making strides and putting in long hours in her government role, Victoria continued connecting with her hobby: making ice cream from her home and sharing it with others. Victoria has always had a joyful connection with ice cream, having fond childhood memories and seeing the impact the sweet treat can have on bringing people together. What was a hobby quickly turned into a career shortly after Victoria won a local competition in 2013 at D.C. Scoop. Ice Cream Jubilee quickly grew into operating across two storefronts, offering nationwide shipping, and stocking several grocery stores. It has been voted Best Ice Cream in Washington, DC nine times and has been named one of the Best Ice Cream Shops in America by Tastemade, Food & Wine, Alton Brown, and Travel & Leisure. Victoria is inspired by her family and her first-generation parents, an entrepreneur mother working in construction and her father, a neurologist who would come home and share an ice cream treat with his family after a long day.
