Meat Science class broke down a pork loin into retail cuts šŸ–

This is our inaugural semester of this skills based class. Ms. Liddane is on a committee within Minnesota Association of Agricultural Educators where members developed a state wide high school meat cutting curriculum which we got to pilot this semester!

Units include:
Safety and Sanitation
PPE and Equiptment
Carcass, Yield and Quality grading
Careers
Packaging
Processing
Cooking methods

Thank you to Grand Champion Meats and Thielen Meats for supporting our new meats program through tours, experiences and materials.

Also thank you CLC Meats Program for training our FFA Meat Eval and Technology Team.

We are looking forward to the future of this program as meat processors and butchers are a high need in our region.

If you or someone you know has a skillset in meat cutting and processing, please introduce yourself to the Royalton Ag Ed Program. We would love to connect you with our students for learning experiences.

FFA State Convention was held just this last week at the University of Minnesota! Taking over 30 members, Royalton FFA headed down to the cities on Sunday afternoon in the direction of Autumnwood Farms to tour their dairy cattle milking and processing facilities! We then headed to our hotel for dinner and study time!
On Monday, we were leaving our hotel by 7am and members were dropped off at their competitions. Our chapter then went to the Mariucci Hockey Stadium for the 1st general sessions. Benjamin Neutz and Brody Navarro participated in State Band and Choir. Benjamin, playing trombone in the band, and Brody, singing front row of the choir, have been practicing on their own for months and were able to perform during this time!
Monday night, we attended the 2nd general session. During this session, our chapter received the Superior Chapter Award! We are so honored to have received this huge achievement! Also during this session, Brynn Gramentz received her State Degree! We are beyond proud of her!!
Tuesday morning, Benjamin and Brody preformed again, and Daniel Daak preformed a talent piece on the big stage! Singing ā€œIn colorā€ by Jamey Johnson, Daniel did such an amazing job! Afterwards, we toured agriculture fraternity and sorority houses!
This is when our trip came to an end, and we headed home after such a long but fun 3 days!

Allergen monitoring lab in Food Science I 🧪

Food Science students demonstrated our knowledge on the Big 9 food allergens by practices Good Manufactural Practices and following Standard Operating Procedures (SOP), and Standard Sanitation Operating Procedures (SSOP).

We made puppy chow, ā€œcleaned/sanitizedā€ as directed for their assigned group, used the AllerSnap (swab that tests proteins), incubated the tests and got our results!

Key:
green = pass
Gray= need to reclean/sanitize.
Purple = FAIL allergen present

Not only did we get to practice of skills of GMP, SSOP, SOP but we also got to enjoy the puppy chow. 🐶

Next unit- Nutrient analysis šŸ”¬šŸ§«

Congratulations to Natalie Kaeter for being our March member of the month! Natalie is part of the Milk Quality CDE team, which is advancing to state in a few weeks. She is also on the Conduct of Chapter Meeting team that went to state in December. Congrats again Natalie!

We also recently held our April chapter meeting! During our meeting, we discussed lots about upcoming items, such as 2026-2027 officer and committee chair applications! For our activity, we had an FFA Knowledge Quiz as a competition for an Easter treat. The person with the highest score from each grade received a chocolate treat! If applying to be an officer or committee chair, the scores from their quiz went on their application! Good luck to all applying!
