I look for:
• Ownership mindset
• Calm under pressure
• Ability to build teams… not just manage them

Because anyone can run a shift.
Very few can build a business.

That’s the difference between good and elite.

Your hiring process isn’t “fine.”

It’s not.

It’s:
• Slow response times
• Unstructured interviews
• No clear definition of what “great” looks like

Top candidates don’t wait around.
They get multiple opportunities they choose the best one.

If your process feels unclear, slow, or disorganized…
you’ve already lost them.

The best operators don’t just evaluate talent.
They know how to attract it.

An uncomfortable but important moment for hospitality.

The Tin Building by Jean-Georges Vongerichten — a nearly $200M vision — has officially closed after just three years.

Legendary chef. Historic NYC location. Massive capital. Global hype.
And still… it didn’t work.

This isn’t about talent. It’s about density, economics, and timing.

Food halls don’t survive on prestige — they survive on volume.
Restaurants can perform well and still be sunk by the larger machine around them.
Burn rates don’t care about Michelin stars.

Jean-Georges said it best:

“The density of people coming in was not there for the market.”

Now the space will become the Balloon Museum — built for tourism, foot traffic, and experiences.

Big lesson for the industry:
Bigger ≠ safer.
Vision must match reality.

8 YEARS.
7 MONTHS LATER… FOR SALE? 👀

The Waldorf Astoria New York — one of the most iconic hotels in American hospitality — is reportedly being shopped less than a year after its long-awaited relaunch.

Let that sink in.

▫️ $2B restoration
▫️ Rooms cut from 1,400 → 375 (some of the largest in NYC)
▫️ World-class spa, reimagined event spaces, signature F&B
▫️ Branded residences with full hotel access
▫️ One of the most hyped reopenings in recent memory

And now?
Back on the market.

This isn’t gossip. The Wall Street Journal reports the owner may bring it to market as soon as next month.

So what’s the real takeaway?

This isn’t a hotel problem.
It’s a capital, timing, and strategy problem.

We’re officially in an era where:
➡️ Legacy alone isn’t enough
➡️ Even “trophy assets” aren’t immune
➡️ Ownership structure matters as much as design
➡️ Talent, operations, and vision must align — fast

I’ll keep saying it:
Great buildings don’t create great hotels. Great people do.

The next chapter of the Waldorf will say a lot about where luxury hospitality is headed.

Schrager keeps vision, concept, and brand stewardship.

That’s not dilution.
That’s leverage.

Creator-led brands don’t fail because of ideas.
They fail when operations can’t keep up with vision.

This partnership signals a bigger trend we’re seeing across luxury & lifestyle hospitality:

Schrager didn’t invent lifestyle hotels by playing it safe.

After years of silence (and plenty of New York-sized drama), one of the city’s most famous Italian restaurants has officially reopened at 110 Waverly Place — under Stephen Starr and Starr Restaurants.

And yes, chef Mark Ladner is back in the kitchen. 🍝
The Del Posto legend is reviving Babbo classics while adding new hits — think:

Dallas, you’re getting fancy...

Auberge Collection just announced The Knox, opening 2026... and let me tell you, this place is NOT messing around:

105 hotel rooms (so basically 105 excuses to extend your staycation)
53 private residences (because why leave?)
Pool bar, spa, fitness studio, event spaces… basically a wellness retreat meets rooftop party.

Oh, and it’s designed by Martin Brudnizki and Chad Dorsey. Yes, your Instagram feed is about to get jealous.

And get this... it’s smack in the middle of the Knox District, with the Katy Trail right there. So, you can literally go from a morning jog… straight to champagne by the pool. Balance.
