In 1971, Mariano Martinez opened his first restaurant and quickly ran into a problem. Customers loved the frozen margaritas, but bartenders struggled to keep up. The blenders were slow, the drinks were inconsistent, and the ice often ruined the texture.
Then Martinez saw a frozen drink machine at a convenience store and had an idea.
He modified an old soft-serve ice cream machine so it could continuously produce smooth, evenly mixed frozen margaritas. The machine allowed his restaurant to serve the same drink quickly and consistently, even during the busiest nights.
Martinez did not invent the margarita or even the idea of serving one frozen. What he created was the first commercial frozen margarita machine, helping transform the drink into a restaurant staple found far beyond Texas.
His original 1971 machine was eventually acquired by the Smithsonian’s National Museum of American History.
That means sitting alongside artifacts representing some of America’s most important inventions is an old machine from a Dallas restaurant that helped keep the margaritas flowing. Honestly, that feels appropriately Texan.
