National Oyster Rockefeller Day was this weekend. Did you get a chance to celebrate with a plate of oysters? If not, it’s never too late. Oysters Rockefeller is always worth making. We pulled this fan-favorite recipe straight from the ORP kitchen so you can bring Bay flavor home.
🦪 Ingredients
• 4 tablespoons unsalted butter
• 2 garlic cloves, minced
• 1/3 cup Panko bread crumbs
• 2 shallots, chopped
• 2 cups chopped fresh spinach
• Salt and pepper, to taste
• Dash of red pepper sauce
• 2 tablespoons olive oil
• 1/4 cup grated Parmesan
• 1 tablespoon chopped parsley
• 2 dozen oysters, on the half shell
• Lemon wedges, for garnish
🦪 Directions
• Melt butter in a skillet. Sauté garlic for a couple of minutes to infuse.
• Put bread crumbs in a bowl and mix in half the garlic butter.
• To the remaining garlic butter in the skillet, add shallots and spinach. Cook until spinach wilts. Season with salt, pepper, and a dash of red pepper sauce.
• Mix olive oil, Parmesan, and parsley into the bread crumbs. Season again with salt and pepper.
• Spoon a heaping teaspoon of the spinach mix onto each oyster, then top with the bread crumb mix.
• Arrange on a baking sheet and bake at 450°F for 10–15 minutes until golden.
• Serve with lemon wedges and your favorite hot sauce.
