🇹🇭 #หัวหมูทรงเครื่อง อาหารโบราณจากสำรับฝ่ายหน้า👇Hua Moo Song Krueng: An Ancient Thai Dish from the Royal Cuisine of the Reign of King Chulalongkorn. (“Hua Moo Song Krueng” is a traditional Thai dish made from boiled pig’s head, cut into pieces and tossed with a tangy, savory dressing and fresh vegetables.
“Hua Moo Song Krueng” (หัวหมูทรงเครื่อง) is an ancient Thai dish whose name may lead people today to think of braised pork head in a Chinese-style seasoning or a whole pork head used as a ceremonial offering. However, when looking back at Thai cookbooks from the early 25th Buddhist century, during the reign of King Rama V, a different and fascinating preparation of this dish can be found.
An important historical reference to “Hua Moo Song Krueng” appears in the menu prepared for the ceremony marking the establishment of the Royal Residence at Dusit Palace, R.S. 124 (1905), during the reign of King Chulalongkorn (Rama V). It was part of the menu for the Front Court, as recorded in a royal letter written by King Chulalongkorn (Rama V) dated 25 November R.S. 124 (1905). One passage states:

“His Royal Highness Prince Phuang Soi Sa-ong prepared Hua Moo Song Krueng.”

“His Royal Highness Prince Kanchanakon prepared Yam Thawai.”

“His Royal Highness Prince Wani Rattanakanya prepared Phrik Khing Pa.”
In addition, “Hua Moo Song Krueng” is also found in Mae Khrua Hua Pa (The Head Cook) by Than Phuying Plian Phasakorawong, which was first published in B.E. 2454 (1911). The recipe for Hua Moo Song Krueng in Mae Khrua Hua Pa has the following ingredients and preparation:
Main Ingredients:
One whole pig’s head, spring onions, coriander, red chilies, lettuce or salad greens, beetroot, carrot or “yellow mustard greens,” cucumber, nam khoei dee (fermented fish seasoning), salt, sauce, granulated sugar, vinegar, Japanese fish sauce, and saltpeter.
Preparing the Pig’s Head:
1. Remove the bristles from the pig’s head, keeping the tail and all four feet attached.

2. Soak it in a concentrated salt solution mixed with saltpeter for approximately nine hours, turning the pig’s head during the soaking process to help give the meat a reddish color and soften the skin.

3. Boil until the pork skin becomes tender, then remove the pig’s head and cut it into relatively large but not overly thick pieces. Blanch the pieces in hot water once more, then drain off the water and excess fat.

4. Toss the sliced pork head with the vegetables and seasonings, including vinegar, nam khoei dee, sauce, and Japanese fish sauce. Season to taste so that it is fairly salty with a slightly sour-forward flavor.

5. Prepare the vegetables, such as:
- Finely shred the spring onions and soak them in water so that they curl.
- Split the red chilies and soak them in water until they open like flowers.
- Carve the cucumbers into decorative patterns.
- Carve the carrots and beetroot into decorative patterns.
- Toast the sesame seeds until fragrant.

6. Toss all the ingredients together with the pork head and arrange them on a serving plate, placing the vegetables toward the front, creating an attractive presentation before serving as part of the royal meal.
So, What Exactly Is “Hua Moo Song Krueng”?
Put simply for modern readers, Hua Moo Song Krueng can be described as: Boiled pig’s head that is seasoned and served chilled, tossed with a sweet-sour and salty dressing, and elaborately garnished with carved vegetables.
It is therefore not the same as braised pork head in the style of phalo, nor is it simply boiled pork head served with a dipping sauce as commonly found today. Instead, it is a dish that places equal importance on flavor, preparation, and the elaborate presentation of the royal Thai table.

“หัวหมูทรงเครื่อง” เป็นอาหารไทยโบราณที่ชื่ออาจทำให้คนปัจจุบันนึกถึงหัวหมูต้มพะโล้หรือหัวหมูที่ใช้ในเครื่องเซ่นไหว้ แต่เมื่อย้อนกลับไปดูตำราอาหารไทยในช่วงต้นพุทธศตวรรษที่ 25 หรือในสมัยรัชกาลที่ 5
หลักฐานสำคัญที่กล่าวถึง “หัวหมูทรงเครื่อง” ปรากฏในรายการอาหารสำหรับพระราชพิธีขึ้นพระตำหนักเรือนต้น พระราชวังดุสิต ร.ศ. 124 (พ.ศ. 2448) ในสมัยรัชกาลที่ 5 โดยเป็นรายการอาหารของสำรับฝ่ายหน้า ซึ่งปรากฏอยู่ในพระราชหัตถเลขาของรัชกาลที่ 5 ลงวันที่ 25 พฤศจิกายน ร.ศ. 124 (พ.ศ. 2448) และมีข้อความตอนหนึ่งว่า...
“พระเจ้าบรมวงศ์เธอ พระองค์เจ้าพวงสร้อยสอางค์ ทรงทำหัวหมูทรงเครื่อง”
"พระเจ้าบรมวงศ์เธอ พระองค์เจ้ากาญจนากร ทรงทำยำทวาย”
“พระเจ้าบรมวงศ์เธอ พระองค์เจ้าวาณีรัตนกัญญา ทรงทำ พริกขิงป่า”
นอกจากนี้ “หัวหมูทรงเครื่อง” ยังพบในตำรา “แม่ครัวหัวป่าก์” ของท่านผู้หญิงเปลี่ยน ภาสกรวงศ์ ซึ่งตีพิมพ์ครั้งแรกเมื่อ พ.ศ. 2454 ซึ่งเมนูหัวหมูทรงเครื่องในตำรา “แม่ครัวหัวป่าก์” มีลักษณะและวิธีปรุงดังนี้
วัตถุดิบหลัก
หัวหมู 1 หัว, ต้นหอม, ผักชี, พริกแดง, ผักกาดหอมหรือผักกาดสลัด, หัวบีทรูท, แครอทหรือ “ผักกาดเหลือง”, แตงกวา, น้ำเคยดี, เกลือ, น้ำซอส, น้ำตาลทราย, น้ำส้ม, น้ำปลาญี่ปุ่น และดินประสิว
วิธีเตรียมหัวหมู
1. ขูดขนหัวหมูออก โดยให้มีทั้งหางและเท้าทั้งสี่ติดอยู่
2. นำไปแช่น้ำเกลือเข้มข้นผสมดินประสิวประมาณ 9 ชั่วโมง โดยกลับหัวหมูระหว่างแช่ เพื่อให้เนื้อมีสีแดงและหนังนุ่มขึ้น
3. นำไปต้มจนหนังหมูเปื่อยนุ่ม แล้วนำหัวหมูขึ้นมาหั่นเป็นชิ้นค่อนข้างใหญ่ แต่ไม่หนามาก จากนั้นนำชิ้นหมูไปลวกน้ำร้อนอีกครั้ง และสะเด็ดน้ำ/มันออก
4. นำเนื้อหัวหมูที่หั่นมาคลุกกับผักและเครื่องปรุงรส ได้แก่ น้ำส้ม น้ำเคยดี น้ำซอส และน้ำปลาญี่ปุ่น แล้วปรุงรสให้ค่อนข้างเค็มและมีรสเปรี้ยวนำเล็กน้อย
5. เตรียมผักต่าง ๆ เช่น

• ต้นหอมซอยเป็นเส้นฝอยแล้วแช่น้ำให้ม้วน
• พริกแดงผ่าและแช่น้ำให้บานเป็นดอก
• แตงกวาสลักเป็นลวดลาย
• ครอทและหัวบีทรูทก็สลักเป็นลวดลาย
• งาคั่วให้หอม
6. นำทั้งหมดมาคลุกกับหัวหมูและจัดลงจานโดยเรียงผักไว้ด้านหน้า ให้เกิดความสวยงามก่อนนำขึ้นสำรับ
ดังนั้น “หัวหมูทรงเครื่อง” จริง ๆ คืออะไร?
ถ้าอธิบายให้คนปัจจุบันเข้าใจง่ายที่สุด คือ หัวหมูต้มปรุงรสแบบเย็น คลุกน้ำปรุงรสเปรี้ยวเค็ม แล้วจัดแต่งด้วยผักแกะสลักอย่างประณีต จึงไม่ใช่หัวหมูพะโล้ และไม่ใช่หัวหมูต้มที่นำมาจิ้มน้ำจิ้มแบบที่เราพบในปัจจุบัน
