About the Role
We are seeking an exceptional Pastry Chef to join our artisanal gelato lab in Gigiri. This role is designed for a highly skilled and creative professional with a passion for craftsmanship, precision, and elevated dessert experiences. The successful candidate will play a key role in curating and executing a sophisticated gelato offering that reflects quality, innovation, and attention to detail.
Key Responsibilities
Conceptualize, develop, and refine a portfolio of premium gelato flavors, balancing classic profiles with contemporary, innovative creations
Execute gelato base preparation and pasteurization with precision, ensuring consistency and excellence in every batch
Operate specialized gelato equipment to achieve superior texture, density, and mouthfeel aligned with artisanal standards
Source, prepare, and incorporate high-quality ingredients, including seasonal fruits, fine chocolates, and handcrafted inclusions
Uphold exceptional quality control standards, ensuring consistency in flavor, texture, and presentation
Maintain optimal storage, handling, and display conditions to preserve product integrity and visual appeal
Champion the highest standards of hygiene, food safety, and lab organization
Collaborate on seasonal menu curation, limited-edition offerings, and continuous product innovation
Monitor inventory and support efficient, waste-conscious production practices
Qualifications and Experience
Diploma or certification in Pastry Arts, Culinary Arts, or a related discipline
Proven experience in a high-end pastry, dessert, or gelato environment
Strong technical understanding of gelato production and ingredient functionality
Familiarity with specialized gelato equipment and artisanal production techniques
Demonstrated creativity and a refined palate
Meticulous attention to detail and commitment to excellence
