Build Your Own (BYO) Noodle Bowl Dinner or 15 Minutes Soba Noodle Salad w/ Tahini Miso Sauce
Serves 2-4 depending on how hungry you and how many toppings you add
Ingredients
•1 packet soba noodles (normally 100% buckwheat) - can sub with rice noodles or egg noodles, even ramen noodles work here
•1/4 cup tahini -can sub with peanut or almond butter, have tested both and they work well
•1-2 tbsp miso paste -I like a fairly strong miso taste, but you may prefer a milder outcome
•2 tbsp soy sauce / tamari
•1 tsp sesame oil
•1 tsp maple syrup
•1 tbsp water - you can
•juice of 1 lime - lemon juice will work fine too
Optional Noodle Bowl Toppings - Choose A Few
•Crushed toasted peanuts
•Crushed toasted cashew nuts
•Spring onions, roughly chopped
•Cucumber, julienned
•Carrots, julienned
•Steamed edamame beans
•Roasted pumpkin cubes
•Fresh mint leaves
•Fresh coriander leaves
•Baked or fried firm tofu cubes
•Blanched greens - boy chow, kale, spinach
•Sliced Birds Eye chillies
•Sliced seaweed
•Chilli oil
Directions
1.Bring a saucepan of water to the boil and cook noodles according to packet instructions.
2.Blend all remaining ingredients until smooth.
3.Toss sauce through just cooked noodles.
4.Divide into bowls, and serve with a selection of toppings and some chilli oil on the side.
5.Let people build their own bowl by adding the toppings of their choice.
