Great stint Tony Pierce 🏴👌
After an incredible 32 years at Knockinaam, I will be hanging up my apron at the end of April. What an incredible journey it has been, from coming across the job by chance in 1994 to leading a world-class kitchen team for the past three decades.
Knockinaam has been more than just a job to me, it became my second home and extended family- full of happiness. I feel so privledged to be able to say I have been in a job I have loved for over thirty years.
For me, it has been a pure joy to cook for our guests over the years; many of whom have now become good friends. Leading a kitchen team with so much talent and seeing younger chefs flourish has been amazing, I want to thank them for all their hard work and trusting me as a mentor and friend.
I have always thought a kitchen that is full of fun and laughter delivers the best food. And we have certainly had plenty of laughs over the years (as well as playing every sport known on the front lawn, breaking some windows in the process!)
I also want to thank all of the previous owners for giving me the freedom to cook my own food, which has ultimately led to the success of both my career and the lodge.
I look forward to all our celebrations together!
