Last year, we waited tables at the South West Polo Day. This year, we sat at one.

Yesterday, we joined Hospitality Action at Beaufort Polo Club for a day in support of hospitality people in crisis, in association with Four Seasons Fruiterers.

A Taittinger reception, a thrilling match, and a four-course lunch from six brilliant chefs: Hywel Jones (Lucknam Park), Chris Cleghorn (The Olive Tree), John Jewell (Calcot & Spa), Michael Nizzero (The Waterside Inn), Elly Wentworth (Fowlescombe) and Dean Westcar (Dumbleton Hall) 👏

The best part? Every plate at this event is carried by hospitality volunteers giving up their Sunday. We know exactly how much work goes into a day like this, which made being on the receiving end even sweeter.

This year’s Polo Day raised an amazing £57,000!

Whichever side of the table we’re on, we’ll keep showing up for

Helen at came to us looking for a Head Chef.

Fox is a beautiful, refined neighbourhood restaurant in Catherine-de-Barnes. A small team, intentionally low covers, and properly good food. Lichfield asparagus, smoked eel velouté, house focaccia with hay-smoked butter. 👌

Like a lot of independents right now, the recruitment fee was (understandably) a big consideration. Cash flow is unforgiving in 2026.

👉So, we split the fee over six months - same fee, less pressure - and got on with finding the right person.

That right person is , who’s now settled in beautifully and is already making waves.

Independents are the businesses keeping British hospitality honest. Cooking properly. Sourcing locally. Employing locally. Anchoring the places they sit in.

They deserve recruitment that works for them.

Congratulations, Helen, Sam and the whole Fox team.

It has been wonderful working with you on this.

When someone hands in their notice, it’s often accepted without question.

No asking why. No awkward conversation. Just quietly letting them go.

Then you hire someone new into the same role, managed by the same person, in the same environment. And potentially watch them leave six months later.

But when someone hands in their notice, you’re both positioned to have a more honest conversation than you’ve ever had. There’s gold there. That’s how good people stop leaving for the same reasons.

“People just don’t stay in hospitality.”

That’s not a law of nature. It’s a consequence.

Birmingham opens Monday, and we couldn’t be more buzzing.

We placed Vicky Holland as GM, and honestly, we could not think of a better person to lead the team at Blacklock, Brum.

Vicky has been a part of Birmingham hospitality for years. Gusto, Mission Mars, Harborne Kitchen. She’s stayed, she’s grown, and she’s earned the respect of everyone she’s worked with simply by being the best at what she does. What an operator.

Get yourself booked in. You’ll be in very good hands, indeed.

Good luck, Vicky and team. ❤️

Exciting New Role - Chimney Sweep - Major New Stadium Development, Birmingham - Competitive (negotiable)

An exciting opportunity has arisen for experienced Chimney Sweeps at a proposed new stadium in Birmingham. We’re looking for people comfortable working in dark, sooty environments with poor visibility and a challenging atmosphere.

The role:
∙ Managing the 12 main stadium chimneys
∙ Keeping things clean despite a constant cloud of disappointment
∙ Reassuring those around you that things will eventually get better
∙ Occasional work at height (up the chimney rather than the league)

You’ll need:
∙ A strong back, for carrying the weight of expectation
∙ Tolerance for soot and grime
∙ Previous experience is ideal (our coaching team struggle with football, let alone these more niche job roles)

What we can offer:
∙ A brand new working environment (eventually)
∙ Unobstructed views of the pitch — something the current squad also struggle with
∙ A supportive team environment. More than we can say for the dressing room.

Tonic Talent is a specialist hospitality recruiter, proudly based in Birmingham, recruiting across the UK. We support Aston Villa. This post was made in the best possible taste.
