This one comes with almond ice cream and Heather’s version of Violet Crumble. A classic Spanish dessert, often served at Easter, and the kind of thing your villa guests will talk about long afterwards. Quite frankly I could eat it daily 🤣

Gazpacho, but make it white. (And a lot older than the red one!)

Before tomatoes ever made it over from the Americas, Spain was already whizzing up cold soups. This is ajo blanco: almonds, garlic, bread and olive oil. Silky, pale and weirdly addictive.
Its roots are Roman, or Moorish, or a bit of both, but it became an Andalusian classic, traditionally served with sweet green grapes.

Ruth's version comes ice cold with toasted almonds and a drizzle of olive oil. Summer in a bowl.

Somewhere around week 12 of high season, you stop counting and just keep going 🤣

This summer, and under intense heat conditions, our team of private chefs, waiters and hospitality staff have been working tirelessly across villas throughout Mallorca — dinner after dinner, day after day, each meal personally planned.

We don’t work from set menus or standard packages. Every booking is uniquely planned around each family, and entrusted to a team of chefs, butlers and waiters who genuinely enjoy what they do, and care that the service goes really well. That’s not a tagline for us — it’s just how we work, and honestly, it’s the part we’re the proudest of.

For the villa owners, property managers and event planners we work alongside, we hope that shows up in the small ways: fewer things to worry about, guests who leave happy, and a team on their property they don’t have to think twice about.
