🍣🥢 Sushi Day in the Kitchen! 👩‍🍳👨‍🍳

Sushi day is always a favourite with our Culinary Pre-Apprenticeship students, and this one was no exception! 😋

The students kicked things off by working together to butcher a whole salmon, gaining valuable hands-on experience and learning more about preparing fish for sushi.

From there, it was time to get rolling! 🍣 Students learned how to properly cook and season sushi rice, create their own sushi rolls, and carefully form nigiri using salmon, tuna, and shrimp.

But the deliciousness didn’t stop there! They also prepared miso soup, crispy tempura vegetables, and wontons to complete their Japanese-inspired feast! 🥢🍤

It was a fantastic day of teamwork, creativity, and learning new culinary techniques, with plenty of delicious results to enjoy!

Another great example of our students expanding their skills and exploring flavours and techniques from around the world! ❤️

There’s nothing quite like homemade pizza, especially when you get to create it exactly the way you like it! 😋

Our Culinary Pre-Apprenticeship students had a fantastic time getting creative in the kitchen, experimenting with different base sauces, fresh ingredients, and unique topping combinations to create their own delicious pizzas!

And why stop at traditional pizza? Some students took their creativity a step further and tried their hand at making their very own stuffed crust pizzas! 🧀🍕

It was a fun-filled day of learning, experimenting, and discovering just how many delicious possibilities there are when you start from scratch!

👩‍🍳🌱 From Student to Sous Chef: A Full Circle Moment!

We love welcoming our graduates back into the kitchen, especially when they bring delicious new recipes and inspiring stories to share! ❤️

This week, we had the pleasure of welcoming Chef Brenda, a 2021 graduate of our Culinary Pre-Apprenticeship Program, who is now the Sous Chef at London Bicycle Café! 👏

Chef Brenda introduced our current students to the delicious world of plant-based cooking, teaching them how to make vegan “scrambled eggs” using soft tofu, along with her creative Pumpkin Spice Monte Cristo! 🍂🥪

Both dishes were a HUGE hit, turning even the skeptics into believers that vegan cuisine can be absolutely delicious! 😋🌱

Beyond the cooking, Brenda shared her culinary journey since graduating from our program, offering students a firsthand look at where their training, hard work, and passion can take them.

These are the moments that make our program so special: seeing our graduates succeed and return to inspire the next generation of culinary professionals! ❤️

🐷🔪 Charcuterie Week!

Our Culinary Pre-Apprenticeship students had an incredible hands-on experience this week, exploring nose-to-tail butchery and charcuterie!

We started with the butchery of half a pig, locally sourced from Linton Pasture Pork, and were happy to welcome Chef Steve back for a few days to guide the students through breaking it down into primal cuts.

From there, the students put their culinary skills to work! 👩‍🍳👨‍🍳 They:

🥓 Cured bacon
🍖 Brined the leg
🌭 Made a variety of sausages
🔪 Prepared terrines and rillettes
🐷 And one student even took on the challenge of making coppa di testa using the pig’s head!

A big focus of the week was learning how to respect and make use of the whole animal. Nose-to-tail butchery is an important part of reducing food waste while also teaching students just how versatile each cut can be.

It was definitely an eye-opening experience, and one that sparked some new interests! A few of our students are now considering butchery as a skill they’d like to pursue further as part of their culinary careers. 🙌

What a week of learning, experimenting and gaining a whole new appreciation for the craft behind butchery and charcuterie!

London Training Centre is looking for a **full-time Job Developer / Job Coach** to join our Employment Services team!

This position is a great opportunity for someone who enjoys building relationships with employers while helping individuals overcome barriers, find meaningful employment and succeed in the workplace.

**What you’ll be doing:**
🔹 Building and maintaining relationships with employers across a variety of industries
🔹 Identifying employment opportunities and placements that match clients’ skills and goals
🔹 Providing individualized job search support and job coaching
🔹 Supporting clients as they transition into employment and helping them maintain long-term success
🔹 Working with employers and clients to address challenges that may arise during placements
🔹 Conducting employer and community outreach
🔹 Staying current on London-area labour market trends and employment opportunities
🔹 Maintaining client and employer records, documentation and reports

**We’re looking for someone who brings:**
⭐ Experience in job development, business development, outside sales, marketing or employer relations
⭐ Experience coaching and supporting individuals who may face multiple barriers to employment
⭐ Strong communication, relationship-building, administrative and computer skills
⭐ A social services or related post-secondary education
⭐ Established business contacts within the London and area employer community would be an asset
