Champions in the Kitchen!

A huge congratulations to HGT Apprentices Sam Northcott and Bradley Austin for winning 1st Place at the Marriott Culinary Academy Black Box Challenge in Brisbane on 22 July.

We're incredibly proud of you both and look forward to seeing what comes next in their culinary careers.

Congratulations to our South West Regional 2nd Year Apprentice Siena Simms for taking the Gold Medal in the ACF WA Apprentice of the Year Awards!! She will be heading to Melbourne next week to compete in the ACF Nationals. Well done Siena, and good luck next week!

The latest edition of The Workshop by HGT! Conducted at The Royal, this was a collaboration with the amazing Kylie Roberts from PorkStar. A great masterclass where we broke down a side of Black Berkshire Pork, and made 3 pork related dishes for apprentices, including a Pork Katsu slider with fresh truffles from Australian Truffle Traders, a smoked Kassler Pork Chop, and to finish our dessert "Ferrero Porkcher" with bacon ganache and crispy pig skin praline.

APPRENTICE COMPLETION
On Friday 3th of July 2026 Elsie completed her apprenticeship 😊😊😊😊😊😊
Elsie started her Apprenticeship at The Wanneroo Tavern, where she spent the entirety of her time under Chef Nicole Finaly. Elsie enjoyed learning to deal with busy services, and camaraderie she found with the team. Elsie was always happy to help out with extra events taking place and has proven to be a very driven and dedicated young Chef.
Well done Elsie, your hard work has paid off, congratulations!

HGT does PorkStar 2026!!!
Last Monday two very lucky HGT Apprentices got to work under some of WA’s best Chefs for this years PorkStar event.
Lewis and Jade helped execute 8 amazing canapes designed by some of the biggest names in Perth, demonstrating a high level of professionalism and gaining praise from everybody involved.
HGT is very proud of you both, two great young Chefs in the making!
Thanks to Blaze Young @ Nieuw Ruin, Brian Cole @ Ritz Carlton, James Cole Bowen @ Gibney, Eddie Bulato @ Gather Foods, Larissa Goncalve @ Si Paradiso, and especially Melissa Palinkas @ Young George and Kylie Roberts @ PorkStar for helping to make this happen!

APPRENTICE COMPLETION
On Sunday 5th of July 2026 Shanne completed her apprenticeship!!
Shanne began her journey as a chef as a School Based Apprentice in 2022 at The Brook Bar and Bistro where she learned the basics of the craft, before moving to Good Company under Chef Meni Zini. There she learned to deal with busy services in a large team. She completed her last 1.5 years of her Apprenticeship at ALOFT under Chef Vincy Silveira, where she learnt to manage all sections of the busy kitchen by herself, finishing up on the Grill section. Shanne has proved herself to be a very sincere and honest young chef, always trying her best to learn as much as she can in each kitchen she has worked.
Well done Shanne, a very well deserved qualification, congratulations!

The HGT Chefs will be teaming up with Melissa Palinkas and PorkStar for our next Workshop Masterclass, showing our Apprentices how to break down a side of pork, and cooking 3 very unique pork dishes using beautiful local Berkshire Pork alongside some amazing Perigord Truffles from Australian Truffle Traders
