Assisting the Head Chef in the overall running of the kitchen department.
Being capable of running the kitchen department in its entirety while the Head Chef is on leave/absent.
Training the sous chef in new ideas when it comes to the preparation of 5* standard meals.
Menu planning: bringing fresh, new ideas forward with regards to menus.
Producing meals of a 5* standard for the lodge guests.
Menu planning for staff meals.
Orders/procurement for lodge food supplies.
Good communication skills within the team and with lodge food suppliers.
Always maintaining the 5* standard of the department.
Ensuring the highest standards in the fine details of plating and producing 5* dining experiences.
Proficient in staff training, stock taking, ordering, stock rotation, supervising, quality control, strong leadership skills etc.

CTC basic remuneration of R17, 093.25 DOE, PLUS โ€“
Gratuities;
Accommodation - single room with en-suite bathroom and single bed. Own linen, toiletries etc. must be supplied;

3 meals per day, on cycle;
Uniform;
Provident Fund Contribution OR Medical aid (R1, 471.67) contribution after 3 months;
Any 13th cheque / bonuses etc. are based upon performance and at the discretion of the company.

Work Cycle: 36 days on, 12 days off.
Additionally - 16 Floating days for full yearsโ€™ service

OTHER NB: Candidate must be able to get to the lodge at his/her own cost.
Staff flights are available with Federal Air from OR Tambo to the lodge.

Oversee the maintenance, servicing, and repairs of all lodge vehicles and equipment, including -
Management and manage preventative maintenance schedules to minimise breakdowns.
Ensure all vehicles are roadworthy, safe, and compliant with legal and reserve requirements.
Maintain detailed service records and asset registers.
Advise management on new technology, equipment, vehicles, and best practices that should implement to improve efficiencies and costs.
Lead, manage, and motivate a team comprising: Mechanics and workshop assistants.
Allocate daily tasks to ensure efficient workflow.
Conduct regular performance reviews and provide coaching and skills development.
Enforce discipline, productivity, and high workmanship standards.
Develop weekly and monthly workshop plans and maintenance schedules.
Prioritise urgent repairs to minimize operational disruptions.
Coordinate closely with Lodge operations, guiding department and service teams.
Ensure standby and emergency mechanical support is available.
Manage workshop inventory, tools, spares, lubricants, and consumables.
Maintain minimum stock levels and reorder timeously.
Source suppliers, negotiate pricing, and control costs.
Prepare and manage workshop budgets.
Reduce waste and ensure cost-effective repairs.
Ensure full compliance with OHSA, environmental regulations and internal safety standards.
Conduct toolbox talks and safety briefings.
Maintain a clean, organised, and hazard-free workshop.
Enforce PPE usage and safe work practices.
Inspect completed work for quality and safety.
Implement workshop best practices and SOPs.
Ensure all repairs meet luxury lodge operational standards.

Maintain strong relationships with all high producing PCOs, agents, corporate clients, and other trade partners to ensure their needs are always fulfilled.

Design and introduce innovative, seasonal desserts and pastries.
Manage the daily preparation and baking of high-quality items, ensuring consistency.
Train, mentor, and schedule junior pastry staff.
Control food costs, manage inventory, and order supplies.
Uphold the highest standards of taste, presentation, and sanitation (HACCP).
Work with the executive chef to align dessert offerings with the overall culinary vision.

NEG. Month remuneration โ€“ Please advise your salary expectation upon application;

Accommodation (partly/basically furnished) & own bathroom;
2 meals per day from the staff canteen;

Medical Aid membership is a compulsory part of the package, offering employees the security of ongoing cover, with the full contribution payable by the employee;
Uniform and laundry thereof;
Complimentary staff shuttle service is provided for shift transport, with pick-up before each shift and drop-off after each shift for staff living within approximately 20 km of the property in surrounding local communities.

Work Cycle: 21 days on, 7 days off
Must be flexible and open to possible change in line with operational requirements.
