Green Shakshuka with Chard Leaves, Za'atar, and Spinach
Ingredients:
• 2 tablespoons of olive oil
• 2 onions, chopped into small cubes
• 3 cloves of garlic, sliced
• 4 chopped chard stems (separate stems from leaves)
• 1 bag of spinach
• 250 ml sweet cream
• 4-6 eggs (depending on the number of people)
• 1/2 cube of feta cheese
• 3 stalks of fresh thyme, leaves separated from the stalk
• Pinch of salt
• Pinch of black pepper
Preparation:
1.Heat the oil in a wide pan, add the onions, and mix. Once the onions begin to turn a delicate color, add the garlic and mix again.
2.Add the white part of the chard, cook for about 12 minutes while stirring. Then add the green part and continue mixing until the chard reduces by about half its volume. Repeat the process with the spinach.
3.Add the cream and bring to a boil. Reduce the heat, cover the pan, and cook for another 10 minutes. Add salt and pepper, and mix.
4.Break the eggs into the stew, place crumbled feta cheese and fresh za'atar leaves on top of each egg.
5.Cover the stew and cook on medium-low heat until the eggs reach the desired doneness.
